Ever since we changed the strains of the gluten around 50 years ago, it has created a veritable epidemic of problems in human beings. It not only causes inflammation but allergies, sinus infections, digestive issues, asthma, eczema, IBS, autoimmune diseases, the spike in insulin levels... the list goes on and on. So people started to avoid gluten. You can see gluten-free sections in most of the grocery stores these days. But we still miss eating...
